Spelled is the common name by which the dressed wheats are called, which differ from the most common naked wheat (soft and hard) because at the time of threshing the kernels do not separate from the glumellas. They are the first wheats grown by man and it is possible to trace their origin back over 10 thousand years ago, in the area of the Fertile Half Moon (between Iran, Iraq, Syria and Palestine). The group includes three different species whose crops have reached our days:
spelled small or monococco (Triticum monococcum),
medium spelled or dicocco (Triticum dicoccum),
big spelled or spelled (Triticum spelta).
These are 3 different species, genetically different, therefore with different plant and grain characteristics: the monococco is a small plant, with thin leaves and small and “soft” grain; the dicocco is the most widespread species in the Mediterranean, it has a large, well-developed plant, a large ear and a big grain and is a cousin of durum wheat; spelled is spelled common in Northern Europe, has characteristics similar to soft wheat and produces very floury beans, suitable for the production of flour.
Monococcus spelled: it is the father of all cereals, has a low gluten content (less than the other cereals), rich in yellow pigment and mineral salts, high digestibility. The dicocco spelled: it has a low gluten content, rich in fiber and Betaglucan, suitable to be transformed into semolina for pasta making, high digestibility. Spelled spelled: flour similar to soft wheat, less digestible than monococco and dicocco, suitable for bread making, suitable for all baked products. The pearled spelled is a grain of spelled dicocco “spelled”, ie to which its external coating has been mechanically removed. In this way the grain quickly absorbs the water and cooks more quickly, therefore it is not necessary a soaking and its preparation is really easy.
