220gr of organic chickpea flour
440gr of water
Organic whole sea salt
Extra virgin olive oil
How to make an omelet without eggs? Easy: simply mix chickpea flour with water and that’s it! You can also add spring vegetables: asparagus is one of the best produce to celebrate Spring.
Few steps for a vibrant tasty and colourful appetizer!InstructionsAfter washing the asparagus, chop them coarsely and toss them in a pan with a bit of extra virgin olive oil and sea salt. Stir fry for a few minutes.
Meanwhile in one large bowl assemble the chickpea flour and the water. Mix well using a whisk.Once the asparagus are cooked, drain and put them into the large bowl together with the chickpea flour mixture then stir slowly.Pour into a medium baking tray lined with parchment paper.
Cook for 30minutes at 200 degrees (on a preheated oven). Baked until your chickpea omelet is golden brown.Allow to cool a little before serving and cut into squares or rectangles (or the shape you like). Serve at room temperature or heat them up again in the oven if you like.
This omelet is delicious with vegan mayonnaise or sweet and sour orange sauce.
