Ingredientes for 4 people:

2 medium carrots
100gr green beans
100 gr green peas without pod
2 stick of celery
For the vegan mayonnaise:
2 teaspoons of lemon juice
2 teaspoons of organic mustard
A pinch of salt
A pinch of turmeric powder
85g of organic Soy Milk (Provamel)
100 gr sunflower oil
Wash the vegetables. Boil the potatoes. Get rid of the edges of the green beans and chunk them . peel the carrots and cut in dices. Boil the green peas and the stick of celery previously cut in small cubes.
Do not overcook the potatoes. Check with a fork: as soon as it gets easily through the potato drain them and leave to cool. Do not overcook the vegetables either. As soon as they are ready drain them and leave to cool.
Meanwhile prepare the vegan mayonnaise :
In a narrow and tall recipient blend the lemon juice, the mustard, the soy milk Provamel and the salt. Add then the corn oil and blend again. You will get a dense creamy texture
Peel the potatoes and cut in dices. Pour them in a large bowl with the vegetables and the mayonnaise .
Add some salt if needed.
